Japanese Gyoza Recipe | Crispy Pan-Fried Pork Dumplings
Japanese Gyoza are delicious pan-fried dumplings filled with seasoned ground pork, cabbage, garlic, ginger, and green onions. Their signature texture comes from a crispy golden base paired with a tender, juicy filling and soft dumpling wrapper. These popular Japanese dumplings are commonly served as an appetizer, snack, or side dish with a savory soy-vinegar dipping sauce. Easy to prepare at home, Gyoza are perfect for family meals, gatherings, and Japanese-inspired dinners.
Cooking Method
- Place the chopped cabbage in a bowl, sprinkle lightly with salt, and let it sit for 10 minutes. Squeeze out excess moisture.
- Combine the ground pork, cabbage, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, sugar, and black pepper.
- Place one gyoza wrapper on a clean surface and add about 1 tablespoon of filling to the center.
- Moisten the wrapper edge with water, fold it over the filling, and pleat the edges to seal.
- Repeat with the remaining wrappers and filling.
- Heat the vegetable oil in a large non-stick skillet over medium-high heat.
- Arrange the gyoza flat-side down in the skillet and cook for 2–3 minutes, until the bottoms are golden brown.
- Carefully add the water and immediately cover the skillet.
- Steam for 5–7 minutes, until the filling is fully cooked and the wrappers are tender.
- Remove the lid and cook for another 1–2 minutes to crisp the bottoms again.
- Mix the dipping sauce ingredients in a small bowl.
- Serve the Gyoza hot with the soy-vinegar dipping sauce.
