Classic French Fries | Crispy Golden Homemade Fries Recipe
Classic French Fries are crispy, golden, and perfectly seasoned potato strips with a fluffy, tender center. This timeless side dish is made from simple potatoes and cooked until beautifully crisp on the outside and soft inside.
The secret to excellent homemade French fries is soaking the cut potatoes in cold water to remove excess starch, followed by thorough drying and a two-stage frying process. The first fry gently cooks the potatoes, while the second fry creates the signature golden and crunchy exterior.
Serve Classic French Fries alongside burgers, fried chicken, sandwiches, grilled meats, or simply enjoy them with ketchup, mayonnaise, or your favorite dipping sauce.
Cooking Method
- Peel the potatoes if desired and rinse them under cold water.
- Cut the potatoes into evenly sized sticks, about ¼–½ inch thick.
- Place the potato sticks in a large bowl of cold water.
- Soak for at least 30 minutes, or preferably 1–2 hours.
- Drain the potatoes and rinse them again with cold water.
- Thoroughly dry the potatoes using clean kitchen towels or paper towels.
- Heat the oil in a deep, heavy-bottomed pot to 325°F (165°C).
- Fry the potatoes in small batches for 4–5 minutes. They should be pale and tender but not browned.
- Remove the potatoes and drain on a wire rack or paper towels.
- Allow them to rest for 10–15 minutes.
- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again in small batches for 2–4 minutes, until crisp and golden brown.
- Remove and drain immediately.
- Season generously with salt while the fries are still hot.
- Add black pepper, paprika, or garlic powder if desired.
- Serve immediately with your favorite dipping sauce.
