Potato Wedges | Crispy Oven-Baked Garlic Herb Potato Wedges
Potato Wedges are crispy on the outside, fluffy and tender inside, and packed with savory garlic and herb flavor. Made with simple pantry ingredients, these golden potato wedges are an easy alternative to traditional French fries and make a delicious side dish or snack.
The potatoes are cut into thick wedges, coated with olive oil and a flavorful blend of paprika, garlic powder, oregano, black pepper, and Parmesan, then baked until golden and crisp. They can also be air-fried for an extra crunchy finish.
Serve Potato Wedges with burgers, grilled chicken, steak, sandwiches, or your favorite dipping sauces such as ketchup, ranch, garlic aioli, or spicy mayo.
Cooking Method
- Preheat the oven to 425°F (220°C).
- Wash the potatoes thoroughly and leave the skin on.
- Cut each potato in half lengthwise.
- Cut each half into 3–4 evenly sized wedges.
- Place the wedges in cold water and soak for 20–30 minutes.
- Drain and dry the potatoes very thoroughly.
- Place them in a large bowl.
- Add olive oil, paprika, garlic powder, onion powder, oregano, black pepper, and salt.
- Toss until the wedges are evenly coated.
- Sprinkle in the Parmesan cheese and toss again.
- Arrange the wedges on a parchment-lined baking sheet in a single layer, skin-side down.
- Bake for 25 minutes.
- Carefully turn the wedges and continue baking for another 15–20 minutes, until golden and crispy.
- Remove from the oven and sprinkle with fresh parsley.
- Serve immediately with your favorite dipping sauce.
