Hasselback Potatoes | Crispy Garlic Butter Sliced Potatoes
Hasselback Potatoes are beautifully roasted potatoes sliced into thin accordion-like layers while remaining whole at the base. Brushed with garlic butter and olive oil, then roasted until the edges become wonderfully crisp and golden while the centers stay tender and fluffy.
This elegant potato dish is simple enough for a family dinner yet impressive enough for holidays and special occasions. Fresh herbs, Parmesan, garlic, and black pepper add extra flavor to every crispy layer.
Serve Hasselback Potatoes alongside roast chicken, steak, grilled vegetables, or seafood for a delicious and visually impressive side dish.
Cooking Method
- Preheat the oven to 425°F (220°C).
- Wash and scrub the potatoes thoroughly. Leave the skin on.
- Pat the potatoes completely dry.
- Place one potato on a cutting board between two wooden chopsticks or the handles of two wooden spoons.
- Using a sharp knife, make thin slices across the potato, about ⅛ inch apart.
- Stop cutting when the knife reaches the chopsticks so the potato remains connected at the bottom.
- Repeat with all the potatoes.
- Mix the melted butter, olive oil, minced garlic, thyme, rosemary, black pepper, and salt.
- Brush the garlic butter mixture generously over each potato, making sure it reaches between the slices.
- Arrange the potatoes on a baking sheet.
- Roast for 35–40 minutes.
- Remove the potatoes and gently brush them again with the remaining butter mixture.
- Carefully separate the slices slightly to help them crisp.
- Return to the oven and roast for another 20–25 minutes, until the edges are crisp and golden and the centers are tender.
- Sprinkle Parmesan cheese over the potatoes.
- Return to the oven for 3–5 minutes, until the cheese is melted and lightly golden.
- Garnish with fresh parsley and additional herbs.
- Serve hot with sour cream, chives, or your favorite toppings.
