Japanese Toban Yaki Recipe | Traditional Ceramic-Grilled Japanese Steak & Vegetables
Japanese Toban Yaki is a flavorful Japanese cooking style in which meat and vegetables are grilled or seared on a heated ceramic plate called a toban. This traditional method produces beautifully browned ingredients while helping retain their natural juices and aromas. This easy home-style version features tender beef, mushrooms, onions, bell peppers, and a savory Japanese-inspired sauce made with soy sauce, mirin, garlic, and ginger. Served hot with steamed rice, Toban Yaki makes a delicious and satisfying Japanese lunch or dinner.
Cooking Method
- In a small bowl, mix the soy sauce, mirin, sake, sugar, sesame oil, garlic, ginger, and black pepper.
- Add the sliced beef to half of the sauce and marinate for 15–20 minutes.
- Heat a ceramic griddle or heavy skillet over medium-high heat. Add the vegetable oil.
- Add the marinated beef and sear for 2–3 minutes, stirring occasionally, until browned and cooked to your preferred doneness.
- Remove the beef and keep it warm.
- Add the onion, bell pepper, and mushrooms to the same hot pan. Cook for 4–5 minutes, until lightly browned and tender-crisp.
- Return the beef to the pan and pour in the remaining sauce.
- Toss everything together and cook for another 1–2 minutes, until the sauce lightly coats the meat and vegetables.
- Sprinkle with sliced green onions and sesame seeds.
- Serve immediately with steamed Japanese rice and optional lemon wedges.
