Mexican Enchiladas Recipe | Cheesy Chicken Enchiladas with Red Chili Sauce
Mexican Enchiladas are comforting tortillas filled with seasoned chicken, cheese, and onions, then rolled and covered with a rich red chili sauce before being baked until hot and bubbling. This classic Mexican dish combines tender shredded chicken with warm spices, melted cheese, and a flavorful enchilada sauce for a satisfying balance of savory, smoky, and mildly spicy flavors. Topped with fresh cilantro, onion, and a little sour cream, these enchiladas make a delicious family lunch or dinner and are perfect for gatherings and casual celebrations.
Cooking Method
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Heat the oil in a skillet over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
- Add the shredded chicken, cumin, chili powder, garlic powder, salt, and black pepper. Cook for 2–3 minutes, stirring until well seasoned.
- To make the sauce, combine the tomato sauce, chili powder, cumin, garlic, oregano, broth, and salt in a saucepan. Simmer for 8–10 minutes, stirring occasionally.
- Warm the corn tortillas briefly in a dry skillet or microwave until flexible.
- Spread a thin layer of enchilada sauce over the bottom of the baking dish.
- Dip each tortilla lightly into the warm sauce, then fill with chicken, a little cheese, and onion.
- Roll each tortilla tightly and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce evenly over the rolled tortillas.
- Sprinkle the remaining cheese over the top.
- Bake for 20–25 minutes, until the cheese is melted and bubbling.
- Garnish with cilantro, diced onion, sour cream, jalapeños, and lime wedges if desired.
- Serve hot with Mexican rice, beans, or a fresh salad.
