Mexican Churros | Crispy Cinnamon Sugar Fried Churros

Mexican Churros are a beloved sweet treat made from a simple choux-style dough that is piped into long ridged shapes and fried until crisp and golden. After frying, the warm churros are generously coated in cinnamon sugar, creating a delicious contrast between their crunchy exterior and soft, tender center.

These classic Mexican-style churros are easy to prepare at home and make a wonderful dessert, snack, or party treat. The dough is flavored with vanilla and a touch of cinnamon before being transferred into a piping bag fitted with a star-shaped tip. Piping the dough directly into hot oil creates the characteristic ridges that become beautifully crisp during frying.

Serve Mexican Churros warm with thick chocolate sauce, dulce de leche, caramel, or Mexican hot chocolate for dipping. They are especially delicious when enjoyed fresh from the fryer while the cinnamon sugar is still fragrant and lightly crunchy.

Cooking Method

  1.  Add water, butter, sugar, cinnamon, and salt to a saucepan.
  2.  Bring the mixture to a gentle boil over medium heat.
  3.  Remove from the heat and immediately add the flour.
  4.  Stir vigorously until a smooth dough forms and pulls away from the sides of the pan.
  5.  Allow the dough to cool for about 5 minutes
  6.  Beat in the egg and vanilla until the dough becomes smooth and well combined.
  7.  Transfer the dough to a piping bag fitted with a large star-shaped tip.
  8.  Heat vegetable oil to approximately 350°F (175°C) in a deep, heavy saucepan.
  9.  Carefully pipe 4–6 inch strips of dough directly into the hot oil, cutting each strip with scissors or a knife.
  10.  Fry the churros in batches for 3–4 minutes, turning occasionally, until golden brown and crisp.
  11.  Remove them with a slotted spoon and drain on a wire rack or paper towels.
  12.  Mix the sugar and cinnamon in a shallow bowl.
  13.  While the churros are still warm, roll them generously in the cinnamon sugar.
  14.  Repeat with the remaining dough.
  15.  Serve immediately with chocolate sauce, dulce de leche, or caramel for dipping.
