Japanese Tempura Recipe | Crispy Light-Battered Shrimp & Vegetables

 Japanese Tempura is a classic Japanese dish featuring shrimp and fresh vegetables coated in a delicate, airy batter and fried until lightly golden and crisp. Unlike heavy fried coatings, traditional tempura batter is kept cold and mixed gently to create its signature light and lacy texture. Popular vegetables include sweet potato, bell pepper, eggplant, onion, and green beans, while shrimp are often served as the main protein. Tempura is traditionally enjoyed with a savory dipping sauce and grated daikon, making it a delicious appetizer, side dish, or main meal served with steamed rice. 

Cooking Method


  1. Pat the shrimp and vegetables completely dry with paper towels.
  2. In a bowl, lightly whisk the egg with the ice-cold water.
  3. Add the flour and cornstarch and gently mix until just combined. Do not overmix; a few small lumps are fine.
  4. Heat vegetable oil to 350°F (175°C) in a deep, heavy-bottomed pot.
  5. Lightly dust the shrimp and vegetables with flour, shaking off any excess.
  6. Dip each piece into the cold tempura batter, allowing excess batter to drip off.
  7. Carefully place the battered ingredients into the hot oil in small batches.
  8. Fry for 2–3 minutes, turning gently, until the batter is crisp and lightly golden.
  9. Remove with a slotted spoon and drain briefly on a wire rack.
  10. Mix the soy sauce, dashi or water, and mirin to make the dipping sauce. Serve with grated daikon if desired.
  11. Serve the tempura immediately with the dipping sauce.
