Cooking Method
- Break up the chilled cooked rice and set it aside.

- Transfer the cooked bacon to a plate lined with paper towels, leaving about 1–2 tablespoons of bacon fat in the pan.
- Add the beaten eggs to the pan and scramble until just set. Transfer them to the plate with the bacon.
- Add the onion and carrot to the pan. Stir-fry for 2–3 minutes until slightly softened.
- Add the garlic and frozen peas. Cook for another 1 minute until fragrant and heated through.
- Add the chilled rice and toss thoroughly with the vegetables and bacon fat.
- Pour the soy sauce around the hot edge of the pan and stir-fry for 2–3 minutes until the rice is evenly seasoned and lightly toasted.
- Return the crispy bacon and scrambled eggs to the pan. Add the green onions and black pepper.
- Drizzle in the sesame oil and toss everything together for another 1–2 minutes.
- Taste and add a little salt only if needed.
- Serve hot, garnished with additional green onions or toasted sesame seeds if desired.
