Turkish Döner Kebab | Juicy Homemade Turkish-Style Döner
Turkish Döner Kebab is a famous street-food dish made with thinly sliced, richly seasoned meat cooked until tender, juicy, and beautifully browned. Traditionally, layers of marinated meat are stacked onto a vertical rotating spit, where the outer layer slowly roasts and is shaved into thin slices as it cooks. This creates the signature combination of crispy caramelized edges and succulent meat.
For a practical homemade version, thinly sliced chicken, beef, or lamb can be marinated with yogurt, garlic, paprika, cumin, oregano, and other aromatic spices before being cooked in a hot skillet or oven. The finished meat can be served inside warm pita or flatbread with crisp lettuce, tomatoes, onions, cucumber, and creamy garlic or yogurt sauce.

Cooking Method
- Place the sliced meat in a large bowl.
- Add yogurt, garlic, olive oil, lemon juice, paprika, cumin, oregano, black pepper, and salt.
- Mix thoroughly until every piece of meat is coated.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- Remove the meat from the refrigerator and let it sit at room temperature for about 15 minutes.
- Heat a large skillet or griddle over high heat.
- Cook the meat in small batches so the pan remains hot.
- Sear for 3–5 minutes per side, depending on the thickness and type of meat, until browned and fully cooked.
- For extra crispy edges, continue cooking the sliced meat for another 1–2 minutes.
- Warm the pita or flatbread.
- Fill each bread with the hot döner meat.
- Add lettuce, tomatoes, cucumber, and sliced onions.
- Drizzle with garlic sauce or yogurt sauce.
- Add pickles, chili sauce, or sumac if desired.
- Fold the bread and serve immediately.
