Greece Gemista | Traditional Greek Stuffed Tomatoes & Peppers
Greek Gemista is a classic Mediterranean dish made with ripe tomatoes and colorful bell peppers stuffed with a fragrant mixture of rice, onion, fresh herbs, olive oil, and aromatic spices. The vegetables are slowly baked until tender, allowing their natural juices to blend with the flavorful rice filling.
Traditionally enjoyed as a vegetarian Greek main course, Gemista is especially popular during the warmer months when tomatoes and peppers are at their best. The filling is infused with parsley, mint, garlic, and olive oil, creating a fresh yet comforting flavor.
Gemista can be served warm or at room temperature with crusty bread, Greek salad, feta cheese, or creamy tzatziki. It is an excellent choice for a family Mediterranean dinner, vegetarian meal, holiday table, or traditional Greek feast.
Cooking Method
- Preheat the oven to 375°F (190°C).
- Wash and dry the tomatoes and bell peppers.
- Carefully cut the tops off the tomatoes and peppers, keeping the tops as lids.
- Scoop the pulp from the tomatoes, leaving the shells intact.
- Chop the tomato pulp finely and set it aside.
- Remove the seeds and membranes from the peppers.
- Arrange the tomatoes and peppers upright in a large baking dish.
- Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Add the chopped onion and sauté for 4–5 minutes until softened.
- Add the garlic and cook for another minute.
- Add the rice, chopped tomato pulp, crushed tomatoes, parsley, mint, dill, oregano, salt, pepper, and cinnamon if using.
- Stir well and cook for 5–7 minutes. The rice should remain partially uncooked.
- Remove the filling from the heat and allow it to cool slightly.
- Fill each tomato and pepper about two-thirds full, leaving room for the rice to expand.
- Replace the vegetable tops.
- Arrange the potato wedges between the stuffed vegetables.
- Drizzle the remaining olive oil over the vegetables and potatoes.
- Pour the water into the bottom of the baking dish.
- Season the potatoes with salt and pepper.
- Cover loosely with aluminum foil.
- Bake for 45 minutes.
- Remove the foil and continue baking for another 30–40 minutes, until the vegetables are tender, lightly caramelized, and the rice is fully cooked.
- Remove from the oven and let the Gemista rest for 10–15 minutes.
- Garnish with fresh parsley and serve with feta, yogurt, or tzatziki.
