Chimaki | Japanese Bamboo Leaf Sticky Rice Dumplings

 Chimaki is a traditional Japanese dish made with sticky rice and savory fillings wrapped in bamboo or similar leaves before being steamed or boiled. The leaf wrapping gives the rice a subtle, fragrant aroma while helping keep the filling moist and flavorful. Chimaki is especially associated with Children’s Day (Kodomo no Hi) in Japan, although regional versions and preparation methods vary. 

This savory-style Chimaki combines glutinous rice with chicken, shiitake mushrooms, carrots, soy sauce, and Japanese seasonings. The ingredients are gently cooked and wrapped securely in leaves before steaming until the rice becomes tender, chewy, and aromatic. The result is a satisfying portable meal with a wonderful combination of umami-rich filling and sticky rice. 

Chimaki can be enjoyed as a snack, lunch, side dish, or special-occasion food. Serve it warm and unwrap the leaves just before eating. It is a beautiful Japanese recipe for celebrations, bento-style meals, and traditional gatherings.

  1.  Rinse the glutinous rice several times until the water becomes mostly clear. 
  2.  Soak the rice in water for 4–6 hours, or overnight. 
  3.  Drain the rice thoroughly. 
  4.  Soak the bamboo leaves in warm water until flexible, then rinse and pat dry. 
  5.  Heat sesame oil in a skillet over medium heat. 
  6.  Add the chicken, mushrooms, carrot, and ginger. 
  7.  Cook for 5–7 minutes, until the chicken is nearly cooked. 
  8.  Add soy sauce, mirin, and salt. 
  9.  Stir well and cook for another 2 minutes
  10.  Add the drained sticky rice and mix gently with the filling. 
  11.  Place a portion of the rice mixture in the center of a softened leaf. 
  12.  Fold the leaf securely around the rice to create a triangular or cone-shaped parcel. 
  13.  Tie each parcel with kitchen-safe string if needed. 
  14.  Arrange the wrapped Chimaki in a steamer. 
  15.  Steam for approximately 45–60 minutes, until the sticky rice is completely tender. 
  16.  Carefully remove the Chimaki from the steamer. 
  17.  Allow them to cool slightly before serving. 
  18.  Unwrap just before eating and serve warm.
