Filipino Tinolang Manok Recipe | Authentic Chicken Ginger Soup

 Filipino Tinolang Manok is a comforting traditional chicken soup made with tender chicken, fresh ginger, green papaya, and leafy greens simmered in a light, savory broth. A beloved home-style dish in the Philippines, Tinola is known for its clean, warming flavors and generous use of fresh ginger. The chicken is gently simmered with garlic, onion, and fish sauce before green papaya and chili leaves are added near the end of cooking. Perfect with steamed white rice, this nourishing Filipino soup is a comforting choice for family lunches, dinners, and rainy days. 

Cooking Method


  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the ginger and sauté for 1–2 minutes until fragrant.
  3. Add the garlic and onion and cook for another 2–3 minutes until softened.
  4. Add the chicken pieces and cook for 5–7 minutes, turning occasionally until lightly browned.
  5. Pour in the fish sauce and stir well, allowing it to cook with the chicken for about 1 minute.
  6. Add the water or chicken broth and bring to a gentle boil. Skim off any foam that rises to the surface.
  7. Reduce the heat, cover partially, and simmer for 30–35 minutes, or until the chicken is tender and fully cooked.
  8. Add the green papaya and optional green chilies. Simmer for 8–10 minutes, until the papaya is tender but still holds its shape.
  9. Stir in the chili leaves and cook for another 1–2 minutes, just until wilted.
  10. Taste and adjust the seasoning with fish sauce, salt, and black pepper. Serve hot with steamed rice and calamansi or lemon wedges.
