Japanese Karaage Recipe | Crispy Japanese Fried Chicken
Japanese Karaage is a popular Japanese fried chicken dish made with bite-sized pieces of chicken marinated in soy sauce, ginger, garlic, and sesame oil, then coated in potato starch and fried until golden and crispy. Cooking Method
- Place the chicken pieces in a bowl and add soy sauce, sake, ginger, garlic, sesame oil, and sugar.
- Mix well, cover, and marinate for 30 minutes in the refrigerator.
- Remove the chicken from the marinade, allowing excess liquid to drip off.
- Coat each piece thoroughly with potato starch.
- Heat the vegetable oil to 350°F (175°C) in a deep, heavy-bottomed pot.
- Fry the chicken in small batches for 4–5 minutes, turning occasionally, until golden and cooked through.
- Remove the chicken with a slotted spoon and drain on a wire rack.
- Allow the oil to return to temperature between batches for the crispiest coating.
- Serve hot with lemon wedges and Japanese mayonnaise if desired.
