Moroccan Lemon Olive Chicken | Classic Moroccan-Style Chicken Tagine
Moroccan Lemon Olive Chicken is a fragrant and comforting dish inspired by the traditional flavors of Moroccan cuisine. Tender chicken is slowly cooked with preserved lemon, green olives, garlic, onion, ginger, turmeric, cumin, and aromatic spices, creating a beautifully balanced combination of savory, tangy, salty, and mildly earthy flavors.
The preserved lemon is the signature ingredient, adding a bright citrus flavor that pairs wonderfully with the richness of the chicken and the briny olives. The chicken is gently simmered in a flavorful sauce until tender, allowing the spices and aromatics to develop into a rich and fragrant gravy.
This Moroccan-style chicken is traditionally prepared in a tagine, but a heavy-bottomed skillet or Dutch oven works perfectly for a homemade version. Cooking Method
- Pat the chicken pieces dry and season lightly with salt and black pepper.
- Heat olive oil in a heavy skillet or Dutch oven over medium heat.
- Add the chicken and brown for 3–4 minutes per side.
- Remove the chicken and set aside.
- Add the sliced onion to the same pan.
- Cook for 5–7 minutes, until softened and lightly golden.
- Add garlic, ginger, turmeric, cumin, paprika, and black pepper.
- Stir and cook for about 1 minute until fragrant.
- Return the chicken to the pan.
- Pour in the chicken broth.
- Add half of the preserved lemon.
- Cover and simmer gently for 30–35 minutes, turning the chicken occasionally.
- Add the green olives and remaining preserved lemon.
- Continue cooking uncovered for 10–15 minutes, allowing the sauce to reduce slightly.
- Check the seasoning and add salt only if necessary because the olives and preserved lemon are already salty.
- Sprinkle with fresh cilantro.
- Serve hot with couscous, Moroccan bread, rice, or roasted vegetables.
