Thai Som Tum Recipe | Authentic Green Papaya Salad with Chili & Lime

 Thai Som Tum, also known as Green Papaya Salad, is a vibrant and refreshing dish made with crisp shredded green papaya, tomatoes, long beans, peanuts, chilies, lime juice, and fish sauce. Originating from northeastern Thailand, this iconic salad is celebrated for its exciting balance of spicy, sour, salty, sweet, and savory flavors. Traditionally prepared using a mortar and pestle, the ingredients are gently pounded and mixed to release their aromas while keeping the papaya crisp. Som Tum is commonly served alongside sticky rice and grilled chicken, making it a delicious side dish or light meal. 

Cooking Method


  1. Peel the green papaya, remove the seeds, and julienne it into thin, crisp strips. Keep chilled while preparing the dressing.
  2. Add the garlic and Thai chilies to a mortar. Pound gently until roughly crushed, taking care not to over-pulverize them.
  3. Add the palm sugar, fish sauce, and lime juice. Pound lightly and stir until the palm sugar dissolves into the dressing.
  4. Add the long beans and tomatoes. Gently pound a few times while tossing to release their juices without crushing them completely.
  5. Add the shredded green papaya and carrot to the mortar or a large mixing bowl.
  6. Toss and gently pound the mixture with a pestle or spoon until the dressing coats the vegetables evenly.
  7. Add the roasted peanuts and optional dried shrimp. Toss gently to combine.
  8. Taste and adjust the balance of lime juice, fish sauce, palm sugar, and chilies as desired.
  9. Transfer the Som Tum to a serving plate and sprinkle with additional roasted peanuts.
  10. Serve immediately with lime wedges and sticky rice or grilled chicken if desired.
