 Greek Souvlaki is a classic Mediterranean street food made with tender pieces of marinated chicken grilled on skewers until lightly charred and juicy. The chicken is infused with olive oil, fresh lemon juice, garlic, oregano, and herbs, creating the bright and savory flavors associated with traditional Greek cuisine. Cooking Method


  1. In a large bowl, combine the olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and black pepper.
  2. Add the chicken pieces and toss thoroughly until evenly coated with the marinade.
  3. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. While the chicken marinates, prepare the tzatziki by combining Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, and salt. Refrigerate until ready to serve.
  5. Thread the marinated chicken pieces onto soaked wooden skewers or metal skewers, leaving a little space between pieces for even cooking.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Grill the chicken skewers for 10–12 minutes, turning every few minutes, until browned and lightly charred and the chicken reaches a safe internal temperature of 165°F (74°C).
  8. Warm the pita bread briefly on the grill or in a dry skillet.
  9. Arrange the Souvlaki on a serving platter with warm pita, tomatoes, red onion, tzatziki, parsley, and lemon wedges.
  10. Serve immediately while hot.
