Greek Souvlaki Recipe | Authentic Grilled Chicken Skewers with Tzatziki

Cooking Method
- In a large bowl, combine the olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and black pepper.
- Add the chicken pieces and toss thoroughly until evenly coated with the marinade.
- Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- While the chicken marinates, prepare the tzatziki by combining Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, and salt. Refrigerate until ready to serve.
- Thread the marinated chicken pieces onto soaked wooden skewers or metal skewers, leaving a little space between pieces for even cooking.
