Cooking Method

- Heat the oil and sauté the sliced garlic over low heat until lightly golden and fragrant. Avoid burning the garlic.
- Remove the stems from the dried red chilies and toast them briefly until aromatic.
- Allow all the roasted ingredients to cool completely.
- Add the garlic, chilies, coconut, peanuts, sesame seeds, cumin, salt, and sugar to a grinder.
- Pulse until you get a coarse, dry powder. Do not over-grind into a paste.
- Taste and adjust the salt or chili level if needed.
- Serve immediately or store in an airtight container.
