This easy dip is perfect for serving with spring rolls, dumplings, wontons, fries, momos, noodles, fried rice, and crispy snacks. The level of spiciness can be adjusted by using fewer chilies or removing some of the seeds.
Cooking Method
- Soak the dried chilies in hot water for 15–20 minutes until softened.
- Drain the chilies and remove some seeds for a milder dip.
- Blend the chilies, garlic, ginger, soy sauce, vinegar, sugar, salt, and water into a smooth paste.
- Heat the oil in a small pan over medium-low heat.
- Add the blended chili mixture.
- Cook for 4–5 minutes, stirring frequently.
- Add a little water if the dip is too thick.
- Taste and adjust the salt, sugar, or vinegar.
- Let the dip cool slightly before serving.
- Store leftovers in a clean airtight container in the refrigerator.
