Cooking Method
- Heat 1 tablespoon of oil in a skillet over medium heat.
- Add the chana dal and urad dal and roast until lightly golden.
- Add the dried red chilies, garlic, and ginger. Sauté for 1–2 minutes until fragrant.
- Add the chopped onion and cook until softened.
- Add the tomatoes and cook for 5–7 minutes, until soft and the excess moisture reduces.
- Turn off the heat and allow the mixture to cool slightly.
- Transfer to a blender and add salt, sugar, and a little water.
- Blend into a smooth or slightly coarse chutney according to your preference.
- Heat the remaining oil in a small pan for tempering.
- Add mustard seeds and let them splutter. Add curry leaves and dried red chili.
- Pour the tempering over the chutney and mix gently.
- Serve with dosa, idli, uttapam, vada, or other South Indian dishes.
