Cooking Method
- Remove the stems from the dried red chilies.
- Soak the chilies in hot water for 15–20 minutes until softened.
- Drain the chilies and remove some seeds if you prefer less heat.
- Add the soaked chilies, garlic, vinegar, cumin, sugar, salt, and water to a blender.
- Blend until a smooth, thick paste forms.
- Heat the oil in a small pan over low-medium heat.
- Add the blended chutney and cook for 3–5 minutes, stirring frequently.
- Adjust the consistency with a little water if needed.
- Taste and adjust the salt, sugar, or vinegar.
- Allow the chutney to cool before serving.
- Store in a clean airtight container in the refrigerator.
