Mutton Biryani is a rich and aromatic Indian rice dish made with tender, juicy mutton, fragrant basmati rice, caramelized onions, yogurt, and a blend of warm spices. The mutton is slowly cooked with ginger, garlic, green chilies, and traditional biryani spices before being layered with partially cooked rice. The dish is then finished with saffron, fresh herbs, and fried onions, allowing the flavors and aromas to blend beautifully during the final cooking stage.
This classic biryani is a favorite for family gatherings, festive celebrations, Eid, weddings, and special weekend meals. Every spoonful combines flavorful spiced mutton with fluffy basmati rice and fragrant herbs. Serve hot with raita, salad, boiled eggs, or a refreshing mint chutney for a complete and satisfying Indian meal.
Cooking Method
- Wash and soak the basmati rice for 20–30 minutes.
- Heat oil or ghee in a heavy-bottomed pot and fry the sliced onions until golden brown. Remove and set aside.
- In the same pot, add the whole spices, ginger-garlic paste, and green chilies. Sauté until fragrant.
- Add the mutton, yogurt, turmeric, chili powder, biryani masala, and salt. Cook for 8–10 minutes, stirring occasionally.
- Add enough water, cover, and simmer until the mutton becomes tender. This may take 35–45 minutes, depending on the cut.
- Meanwhile, boil the soaked rice in salted water until about 70–80% cooked. Drain well.
- Layer the cooked mutton with the partially cooked rice.
- Top with saffron, fried onions, mint, and cilantro.
- Cover tightly and cook on low heat for 15–20 minutes.
- Turn off the heat and let the biryani rest for 10 minutes.
- Gently fluff the layers and serve hot with raita or salad.
