 Chicken Biryani is a classic South Asian rice dish made with tender chicken, fragrant basmati rice, caramelized onions, yogurt, and a delicious blend of aromatic spices. Each grain of rice absorbs the rich flavors of the seasoned chicken while saffron, herbs, and whole spices create an irresistible aroma. 

The chicken is first marinated with yogurt, ginger, garlic, and spices before being cooked with onions and tomatoes. Partially cooked basmati rice is then layered over the flavorful chicken mixture and gently steamed until the rice is perfectly tender and the flavors come together. 

This hearty and festive dish is perfect for family dinners, celebrations, weekends, and special occasions. Serve Chicken Biryani with raita, salad, boiled eggs, or a simple chutney for a complete and satisfying meal. 

Cooking Method


  1.  Rinse the basmati rice until the water runs mostly clear. 
  2.  Soak the rice for 20–30 minutes, then drain. 
  3.  Mix the chicken with yogurt, ginger, garlic, turmeric, chili powder, garam masala, coriander powder, cumin, and salt. 
  4.  Let the chicken marinate for at least 30 minutes
  5.  Heat oil and ghee in a large heavy-bottomed pot. 
  6.  Add the cinnamon, cardamom, cloves, and bay leaf. 
  7.  Add the sliced onions and cook until golden brown. 
  8.  Add the marinated chicken and cook for 8–10 minutes
  9.  Add the chopped tomatoes and green chilies. 
  10.  Cook until the chicken is nearly done and the masala becomes thick. 
  11.  Meanwhile, boil the soaked rice in salted water until about 70% cooked
  12.  Drain the rice well. 
  13.  Spread the partially cooked rice over the chicken mixture. 
  14.  Sprinkle with fresh mint, coriander, and saffron milk if using. 
  15.  Cover the pot tightly with a lid. 
  16.  Cook over very low heat for 20–25 minutes
  17.  Turn off the heat and let the biryani rest for 10 minutes
  18.  Gently fluff and mix the layers without breaking the rice. 
  19.  Serve hot with raita, salad, or chutney.
