Paneer Malai Kofta is a luxurious North Indian vegetarian curry featuring soft, golden paneer and potato dumplings served in a rich, creamy tomato-based gravy. The koftas are made with crumbled paneer, mashed potatoes, aromatic spices, and a little flour, then gently fried until golden on the outside and tender inside. The silky curry is prepared with onions, tomatoes, cashews, cream, and fragrant Indian spices, creating a beautifully balanced combination of savory, mildly sweet, creamy, and aromatic flavors.
This popular restaurant-style dish is often prepared for special occasions, festive meals, family gatherings, and weekend dinners. Paneer Malai Kofta pairs wonderfully with naan, roti, paratha, or fragrant basmati rice. Serve the koftas with plenty of the creamy gravy for a comforting and indulgent Indian meal.
Cooking Method
- Combine the crumbled paneer, mashed potatoes, cornstarch, garam masala, chili powder, and salt.
- Mix gently until a soft mixture forms, then shape into small round koftas.
- Heat oil in a deep skillet and fry the koftas in batches until golden brown. Drain on paper towels.
- For the gravy, heat 1 tablespoon of oil in a pan and sauté the onion, tomatoes, cashews, garlic, and ginger until softened.
- Allow the mixture to cool slightly, then blend into a smooth puree.
- Heat the remaining oil or butter in a large skillet and add the cumin seeds.
- Pour in the blended puree and cook for 5–7 minutes until the mixture thickens and the oil begins to separate.
- Add turmeric, coriander, garam masala, chili powder, salt, and sugar if using.
- Pour in the water and simmer for 8–10 minutes until the gravy becomes smooth and creamy.
- Stir in the heavy cream and simmer gently for 2 minutes.
- Add the fried koftas just before serving so they remain tender without becoming too soft.
- Garnish with cilantro, cream, and chopped cashews.
- Serve hot with naan, roti, paratha, or basmati rice.
