Cooking Method
- Wash the spinach thoroughly and blanch it in boiling water for 2 minutes.
- Transfer the spinach to cold water, then drain well.
- Blend the spinach with the green chili into a smooth puree and set aside.
- Heat the oil in a large skillet over medium heat.
- Add the cumin seeds and let them sizzle for a few seconds.
- Add the onion and cook for 5–6 minutes until lightly golden.
- Add the garlic and ginger and cook for 1 minute until fragrant.
- Add the tomatoes and cook until soft and the oil begins to separate.
- Stir in the turmeric, ground cumin, red chili powder, garam masala, and salt.
- Add the spinach puree and water. Simmer for 5–7 minutes over low heat.
- Gently add the paneer cubes and simmer for another 5 minutes.
- Stir in the heavy cream and cook for 1–2 minutes. Avoid boiling vigorously.
- Garnish with fresh cilantro and a little cream if desired.
- Serve hot with naan, roti, paratha, or basmati rice.
