Cooking Method
- Rinse the basmati rice and soak it for 20–30 minutes.
- Heat oil or ghee in a heavy pot and fry the sliced onions until golden. Remove half for garnishing.
- Add the whole spices, ginger-garlic paste, and green chilies. Sauté until fragrant.
- Add the prawns, yogurt, turmeric, chili powder, biryani masala, and salt. Cook for 4–5 minutes until the prawns are almost cooked.
- Remove the prawns temporarily to prevent overcooking.
- Boil the soaked rice in salted water until about 70–80% cooked, then drain.
- Layer the rice over the prawn masala and return the prawns on top.
- Add saffron, mint, cilantro, and fried onions.
- Cover tightly and cook over low heat for 10–15 minutes.
- Turn off the heat and let the biryani rest for 5–10 minutes.
- Gently fluff the rice and serve hot with raita, salad, or lemon wedges.
