Vegetable Biryani is a delicious and aromatic South Asian rice dish made with fluffy basmati rice, colorful vegetables, yogurt, fresh herbs, and a fragrant blend of spices. It is a satisfying vegetarian meal that combines tender vegetables with richly seasoned rice for a comforting and flavorful dish.
The vegetables are cooked with onions, tomatoes, ginger, garlic, yogurt, and warm spices before being layered with partially cooked basmati rice. The biryani is then gently steamed so the rice absorbs the aromatic vegetable masala while remaining light and fluffy. Fresh mint and coriander add a bright finishing touch.
Perfect for family lunches, dinners, celebrations, or weekend meals, Vegetable Biryani pairs beautifully with cucumber raita, salad, pickle, or a simple chutney.
Cooking Method
- Rinse the basmati rice thoroughly and soak for 20–30 minutes.
- Drain the rice.
- Heat oil and ghee in a heavy-bottomed pot.
- Add cinnamon, cardamom, cloves, and bay leaf.
- Add the sliced onion and cook until golden.
- Add ginger, garlic, and green chilies and sauté for 1 minute.
- Add the chopped tomatoes and cook until softened.
- Stir in turmeric, chili powder, cumin, coriander powder, garam masala, and salt.
- Add the mixed vegetables and cook for 5–7 minutes.
- Stir in the yogurt and cook until the masala thickens.
- Meanwhile, cook the soaked rice in salted water until about 70% cooked.
- Drain the rice well.
- Spread the partially cooked rice over the vegetable masala.
- Sprinkle with fresh mint and coriander.
- Cover tightly and cook over low heat for 20 minutes.
- Turn off the heat and let the biryani rest for 10 minutes.
- Gently fluff the rice and mix the layers.
- Serve hot with raita, salad, or chutney.
