Cooking Method
- Heat the oil in a small skillet over medium heat.
- Add the dried red chilies and cumin seeds.
- Toast for 30–60 seconds until fragrant.
- Add the chopped ginger and garlic.
- Sauté for 2–3 minutes until lightly softened.
- Remove from the heat and allow the mixture to cool slightly.
- Transfer everything to a blender.
- Add tamarind pulp, jaggery, salt, and water.
- Blend until smooth, adding a little more water if needed.
- Taste and adjust the tamarind, jaggery, or salt.
- Serve immediately or refrigerate in a clean airtight container.
