The choux pastry is made by cooking flour with butter and water before incorporating eggs to create a smooth, pipeable dough. Cooking Method
- Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
- Combine water, butter, and salt in a saucepan.
- Bring to a boil until the butter is completely melted.
- Add the flour all at once and stir vigorously until a smooth dough forms.
- Cook for 1–2 minutes, stirring constantly, until the dough pulls away from the sides.
- Transfer the dough to a mixing bowl and let it cool slightly.
- Add the eggs one at a time, mixing well after each addition until smooth.
- Transfer the dough to a piping bag fitted with a large round or star tip.
- Pipe long strips onto the prepared baking tray.
- Bake for 25–30 minutes, until puffed and golden.
- Turn off the oven and leave the éclairs inside for 5 minutes with the door slightly open.
- Remove and cool completely.
Make the Pastry Cream
- Heat the milk in a saucepan until steaming but not boiling.
- Whisk the egg yolks, sugar, and cornstarch in a bowl until smooth.
- Slowly whisk the hot milk into the egg mixture.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thick.
- Stir in vanilla and cool completely.
Fill and Glaze
- Make small holes underneath each éclair.
- Pipe the chilled pastry cream into the shells.
- Heat the heavy cream until hot but not boiling.
- Pour it over the chocolate and let stand for 1–2 minutes.
- Stir until smooth and glossy.
- Dip the tops of the éclairs into the chocolate glaze.
- Refrigerate briefly to set the glaze.
- Serve chilled or slightly cool.
