Vanilla Éclairs are elegant French pastries made with light, airy choux pastry filled with smooth vanilla pastry cream and finished with a delicate vanilla glaze. Cooking Method


  1. Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Heat the water, butter, sugar, and salt in a saucepan until the butter melts and the mixture begins to simmer.
  3. Add the flour all at once and stir vigorously until a smooth dough forms and pulls away from the sides of the pan.
  4. Let the dough cool for a few minutes, then beat in the eggs one at a time until smooth and glossy.
  5. Pipe the dough into long strips on the prepared baking tray.
  6. Bake for 25–30 minutes until puffed and golden. Cool completely.
  7. For the filling, whisk the milk, sugar, egg yolks, and cornstarch in a saucepan over medium heat until thick and smooth.
  8. Remove from the heat and stir in the vanilla. Cool completely.
  9. Make small holes in the cooled éclairs and pipe in the vanilla pastry cream.
  10. Mix the powdered sugar, milk, and vanilla to make a smooth glaze.
  11. Dip or spread the glaze over the tops of the éclairs.
  12. Chill briefly and serve.
