Cooking Method

- Make small holes in the cooled éclairs and pipe in the raspberry cream.
- Mix the powdered sugar, raspberry puree, and lemon juice to make the glaze.
- Spread the glaze over the tops and garnish with fresh raspberries.
- Chill briefly and serve.
