Cameroonian Puff-Puff is a popular West African fried dough snack made from a simple yeast-based batter. These golden dough balls are crispy and lightly browned on the outside while remaining soft, airy, and fluffy inside. Puff-Puff is a beloved street food and homemade treat in Cameroon, commonly enjoyed for breakfast, afternoon snacks, celebrations, and family gatherings.
The dough is prepared with flour, yeast, sugar, salt, warm water, and a touch of nutmeg for aroma. After rising until light and bubbly, small portions are carefully dropped into hot oil and fried until evenly golden. Cameroonian Puff-Puff is delicious served warm on its own or alongside beans, pap, tea, or a spicy dipping sauce.
Cooking Method
- Combine the flour, yeast, sugar, salt, and nutmeg in a large bowl.
- Gradually add the warm water, mixing until a thick, smooth, and slightly sticky dough forms.
- Cover the bowl with a clean towel and place it in a warm area.
- Allow the dough to rise for 1–1½ hours, or until noticeably expanded and bubbly.
- Heat vegetable oil in a deep, heavy-bottomed pot over medium heat.
- Test the oil with a small amount of dough; it should rise and gently sizzle immediately.
- Using a spoon or your lightly oiled hand, scoop small portions of dough and carefully drop them into the hot oil.
- Fry in batches, turning frequently, until the Puff-Puff is evenly golden brown and cooked through.
- Remove with a slotted spoon and drain on paper towels.
- Serve warm as a snack or breakfast treat.
