Mbongo Tchobi is a traditional Cameroonian fish stew known for its deep, dark color and bold combination of smoky, spicy, and aromatic flavors. Originating from the Littoral region of Cameroon, this distinctive dish is prepared with fish simmered in a richly seasoned sauce made from roasted Mbongo spice, tomatoes, onions, garlic, ginger, and hot peppers.
The signature Mbongo spice gives the stew its characteristic dark appearance and earthy, slightly bitter aroma. Traditionally served hot with plantains, cassava, cocoyam, or steamed rice, Mbongo Tchobi is a flavorful centerpiece for family meals and special occasions.
Cooking Method
- Clean the fish thoroughly and season lightly with salt and lemon juice. Set aside for 15 minutes.
- Heat 1 tablespoon of oil in a large pot and lightly brown the fish on both sides. Remove and set aside.
- Blend the tomatoes, onion, garlic, ginger, and hot peppers into a smooth mixture.
- Heat the remaining oil in the same pot over medium heat.
- Add the blended vegetable mixture and cook for 8–10 minutes, stirring occasionally.
- Stir in the ground Mbongo spice and cook for another 2–3 minutes until fragrant.
- Pour in the fish stock or water and mix well to create the dark, aromatic sauce.
- Bring the sauce to a gentle simmer and cook for 10 minutes.
- Carefully return the fish to the pot and spoon the sauce over it.
- Cover and simmer gently for 15–20 minutes, until the fish is cooked through and the sauce has thickened.
- Taste and adjust the salt or pepper if needed.
- Serve hot with boiled plantains, cassava, cocoyam, or steamed rice.
