 Miondo, also known as cassava sticks, is a traditional Cameroonian staple made from fermented cassava. Particularly popular in coastal Cameroon, these soft, slightly chewy cassava sticks are prepared by soaking and fermenting cassava before it is processed into a smooth paste, wrapped in leaves, and steamed until tender. 

Miondo has a mild, pleasantly sour flavor that pairs especially well with rich African sauces and stews. It is commonly served alongside dishes such as Mbongo Tchobi, fish stew, pepper soup, or other savory Cameroonian dishes. Although the traditional preparation takes several days because of the fermentation process, the final steaming is relatively simple. 

Cooking Method


  1.  Peel the cassava thoroughly and cut it into manageable pieces. 
  2.  Rinse the cassava well and place it in a large clean container. 
  3.  Cover completely with clean water and leave to ferment for 2–3 days until the cassava becomes soft and develops a mild sour aroma. 
  4.  Drain the fermented cassava and remove any tough fibers from the center. 
  5.  Pound or blend the cassava with a small amount of clean water until you obtain a smooth, soft paste. 
  6.  Prepare clean banana leaves by briefly heating them to make them flexible. 
  7.  Place small portions of the cassava paste along the leaves and roll them into narrow sticks. 
  8.  Fold the ends securely so the paste remains enclosed during steaming. 
  9.  Arrange the wrapped cassava sticks in a steamer without overcrowding them. 
  10.  Steam for 45–60 minutes, or until the Miondo is firm, smooth, and fully cooked. 
  11.  Remove from the steamer and allow the sticks to cool slightly. 
  12.  Unwrap and serve warm with Mbongo Tchobi, fish stew, pepper sauce, or other Cameroonian dishes.
