South Sudan Molokhia is a traditional leafy green stew prepared from finely chopped or ground molokhia leaves, garlic, onions, and aromatic seasonings. Molokhia, also known as jute mallow, is valued for its distinctive earthy flavor and naturally silky texture when cooked. It is enjoyed in different forms across South Sudan and other parts of North and East Africa.
The leaves are gently cooked into a flavorful stew that can be prepared with meat, chicken, or dried fish depending on the region and household. Served hot with kisra, asida, rice, or another grain staple, Molokhia makes a comforting and nutritious family meal.
Cooking Method
- Wash the fresh molokhia leaves thoroughly and drain well. If using frozen leaves, thaw them first.
- Finely chop or blend the leaves according to your preferred texture.
- If using meat, simmer it in a pot with 2 cups of water and a little salt until tender. Reserve the cooking liquid.
- Heat the oil in a large pot over medium heat.
- Add the onion and cook until softened.
- Stir in the garlic and coriander and cook for about 1 minute until fragrant.
- Add the chopped molokhia and stir gently to combine.
- Pour in the reserved meat stock or remaining water and bring to a gentle simmer.
- Add the cooked meat if using, along with the black pepper and salt.
- Simmer for 15–20 minutes, stirring occasionally, until the leaves are tender and the stew reaches a smooth, silky consistency.
- Stir in the lemon juice and adjust the seasoning.
- Serve hot with kisra, asida, rice, or another traditional staple.
