South Sudan Basico is a traditional and hearty dish associated with the Kuku community of Kajo Keji in South Sudan. It combines finely ground sesame seeds with leafy green vegetables and smoked meat or fish, creating a rich, savory, earthy stew with a distinctive smoky flavor.
Traditionally, nyete or black-eyed bean leaves may be used, although collard greens, kale, Swiss chard, or mustard greens can be practical alternatives. The ground sesame thickens the dish naturally and provides a rich source of flavor and protein. Basico is commonly enjoyed with a staple such as Asida
Cooking Method
- Toast the sesame seeds lightly in a dry pan, then grind them into a fine powder.
- Wash and finely chop the leafy greens.
- Heat the oil in a large pot and lightly sauté the garlic.
- Add the greens and stir until they begin to wilt.
- Add the smoked meat or fish and pour in enough water to keep the mixture moist.
- Cover and simmer for about 15–20 minutes, until the greens and meat are tender.
- Gradually stir in the ground sesame seeds.
- Season with salt and black pepper.
- Continue cooking for another 8–10 minutes, stirring frequently, until the sesame thickens the mixture and the stew becomes rich and cohesive.
- Serve warm with Asida, rice, or another traditional staple.
