Japanese Gyoza are delicious dumplings filled with seasoned ground meat, cabbage, garlic, ginger, and green onions, wrapped in thin dough and cooked until golden and crispy on the bottom. Inspired by Chinese dumplings, gyoza have become a favorite in Japanese homes and restaurants. Their signature texture combines a crunchy base with a tender wrapper and a juicy, flavorful filling.
This homemade recipe uses simple ingredients and a classic pan-frying method. The dumplings are first browned in a skillet, then steamed briefly with a little water to cook the filling and soften the wrappers. Served hot with a tangy soy sauce and vinegar dip, Japanese gyoza make a wonderful appetizer, snack, or side dish alongside ramen and rice.
Cooking Method
- Finely chop the cabbage and green onions.
- In a bowl, combine the ground pork or chicken, cabbage, green onions, garlic, ginger, soy sauce, and sesame oil.
- Place a gyoza wrapper in your palm and add about 1 teaspoon of filling to the center.
- Moisten the wrapper edge with water, fold it in half, and pinch the edges firmly to seal. Repeat with the remaining wrappers and filling.
- Heat the vegetable oil in a large non-stick skillet over medium heat.
- Arrange the gyoza flat-side down and cook for 2–3 minutes until the bottoms turn golden brown.
- Carefully add ½ cup of water to the skillet and cover immediately.
- Steam for 5–7 minutes, until the filling is fully cooked and the wrappers are tender. If using pork, ensure the center reaches 160°F (71°C).
- Remove the lid and cook for another 1–2 minutes to evaporate any remaining water and crisp the bottoms.
- Mix the soy sauce, rice vinegar, and optional chili oil to make the dipping sauce.
- Serve the gyoza hot with the dipping sauce.
