Japanese Tonkotsu Ramen is a beloved noodle soup originating in Fukuoka, on Japan’s southern island of Kyushu. It is known for its rich, creamy pork-bone broth, thin ramen noodles, and flavorful toppings. Traditionally, pork bones are simmered for many hours to create a deeply savory, milky broth, while tender pork belly, soft-boiled eggs, spring onions, and nori add layers of texture and flavor.
This quicker homemade version uses prepared pork broth, milk or unsweetened soy milk for a creamy texture, and classic ramen seasonings to create a comforting bowl without the lengthy traditional simmer. The noodles are served in hot broth and topped with sliced pork, eggs, and fresh garnishes. Enjoy this satisfying Japanese specialty for a hearty lunch or dinner.
Cooking Method
- Boil the eggs for 6–7 minutes for soft centers, then transfer them to cold water. Peel and halve.
- Heat the sesame oil in a large pot over medium heat.
- Add the garlic and ginger and sauté for about 30 seconds until fragrant.
- Pour in the pork broth and stir in the soy sauce and optional miso paste.
- Bring the broth to a gentle simmer and cook for 15–20 minutes to develop the flavors.
- If using milk or unsweetened soy milk, stir it in over low heat. Avoid boiling vigorously.
- Cook the ramen noodles according to the package instructions, then drain.
- Divide the noodles among serving bowls and pour the hot broth over them.
- Arrange the cooked pork slices and halved eggs on top.
- Garnish with spring onions and nori. Season with salt and white pepper as needed.
- Serve immediately while hot.
