Japanese Tempura is a popular Japanese dish featuring shrimp and fresh vegetables coated in a delicate batter and fried until light, golden, and crispy. Unlike heavier fried coatings, traditional tempura batter is mixed gently and kept cold to create a thin, airy crust that allows the natural flavors of the ingredients to shine through. Common choices include shrimp, sweet potato, pumpkin, mushrooms, and green beans.
This homemade version uses simple ingredients and a quick-cooking method to achieve delicious, restaurant-style results. The shrimp and vegetables are lightly coated in flour and chilled batter before being fried until crisp. Serve tempura immediately with a savory soy-based dipping sauce, steamed rice, or Japanese noodles for a satisfying lunch, dinner, or appetizer.
Cooking Method
- Pat the shrimp and vegetables dry with paper towels.
- Heat vegetable oil in a deep, heavy pot to 340–350°F (170–175°C).
- In a bowl, lightly whisk the egg with the ice-cold water.
- Add the flour and cornstarch, stirring briefly. A few small lumps are fine; avoid overmixing.
- Lightly dust the shrimp and vegetables with flour.
- Dip each piece into the cold batter, allowing excess batter to drip off.
- Fry in small batches for approximately 2–4 minutes, depending on the ingredient, until pale golden and crisp. Cook shrimp until fully opaque and cooked through.
- Transfer the tempura to a wire rack to drain and keep the coating crisp.
- For the dipping sauce, combine the soy sauce, water, and mirin in a small saucepan. Warm gently, then add ginger if desired.
- Serve the tempura immediately with the dipping sauce and steamed rice or noodles.
