BLT Macaroni Salad is a fresh, creamy twist on the classic bacon, lettuce, and tomato sandwich. It combines tender elbow macaroni, crispy bacon, juicy tomatoes, and crunchy lettuce in a tangy mayonnaise dressing. The smoky bacon, sweet tomatoes, and crisp greens create a delicious balance of savory flavors and refreshing textures in every bite.
Perfect for summer barbecues, picnics, potlucks, and family lunches, this easy pasta salad brings familiar BLT flavors to a crowd-friendly dish. A touch of mustard and lemon juice brightens the creamy dressing, while adding the lettuce just before serving helps keep it crisp. Serve it chilled as a satisfying side dish or enjoy it as a light lunch.
Cooking Method
- Cook the macaroni in salted boiling water according to the package instructions until tender.
- Drain, rinse briefly under cold water, and drain thoroughly. Allow the pasta to cool.
- Cook the bacon in a skillet until crisp. Transfer to a paper towel-lined plate, cool, and crumble.
- In a large bowl, whisk together the mayonnaise, optional sour cream, lemon juice, mustard, garlic powder, black pepper, and a little salt.
- Add the cooled macaroni and halved tomatoes. Mix gently until coated.
- Fold in most of the crumbled bacon and green onions, if using.
- Cover and refrigerate for at least 20–30 minutes to let the flavors blend.
- Just before serving, gently fold in the chopped lettuce to keep it crisp.
- Sprinkle the remaining bacon over the top and serve chilled.
