Filipino Chicksilog is a hearty Filipino breakfast combining chicken, sinangag (garlic fried rice), and itlog (fried egg). This satisfying silog meal features juicy, flavorful chicken seasoned with garlic, soy sauce, and black pepper, served alongside fragrant rice and a freshly fried egg. The combination of savory chicken, aromatic garlic rice, and a rich egg yolk makes it a comforting favorite for breakfast, brunch, or lunch.
This homemade version uses easy-to-find ingredients and a simple marinade that gives the chicken a delicious golden-brown finish. You can pan-fry the chicken until crisp on the outside and tender inside, then prepare garlic rice using chilled leftover rice for the best texture. Serve your Chicksilog with sliced tomatoes, cucumber, or a tangy vinegar dipping sauce for a classic Filipino-inspired meal.
Cooking Method
- Marinate the chicken: Mix the soy sauce, calamansi or lemon juice, minced garlic, and black pepper in a bowl. Add the chicken and coat evenly.
- Rest: Cover and refrigerate for 20 minutes to let the flavors develop.
- Cook the chicken: Heat 2 tablespoons of oil in a skillet over medium heat. Remove excess marinade and cook the chicken for 5–7 minutes per side, depending on thickness, until golden and fully cooked. The center should reach 165°F (74°C).
- Prepare the garlic: In a separate pan, heat 2 tablespoons of oil over medium heat. Add the minced garlic and cook until lightly golden and fragrant.
- Fry the rice: Add the chilled rice, breaking up any clumps. Stir-fry for 4–6 minutes until thoroughly heated. Season with salt to taste.
- Fry the eggs: Cook the eggs in a lightly oiled skillet until the whites are set and the yolks reach your preferred doneness.
- Assemble the plates: Divide the garlic rice among four plates. Add a portion of chicken and one fried egg to each.
- Serve: Enjoy hot with sliced tomatoes, cucumber, or vinegar dipping sauce.
