Filipino Longsilog is a popular Filipino breakfast combining three beloved components: longganisa (Filipino sausage), sinangag (garlic fried rice), and itlog (fried egg). The dish is known for its sweet, savory sausages, fragrant garlic rice, and rich egg yolk. Often enjoyed at home or in Filipino breakfast cafés, Longsilog is a comforting, filling meal that showcases the delicious balance of flavors found in traditional Filipino silog dishes.
The longganisa is pan-cooked until browned and fully cooked, allowing its sweet garlic seasoning to develop a delicious caramelized coating. Garlic fried rice is prepared with chilled rice, golden garlic, and a little salt, while eggs are fried to your preferred doneness. Serve everything together with sliced tomatoes, fresh cucumber, or a tangy vinegar dipping sauce for a classic breakfast experience.
Cooking Method
- Prepare the sausages: Place the longganisa in a skillet and add the water.
- Cook gently: Bring to a simmer over medium heat. Cover and cook for 8–10 minutes, turning occasionally.
- Brown the longganisa: Remove the lid and let the remaining water evaporate. Add a little oil if needed, then cook the sausages, turning regularly, until browned and fully cooked. Follow the package instructions if using pre-cooked or frozen sausages.
- Cook the garlic: In a separate pan, heat 2 tablespoons of oil over medium heat. Add the minced garlic and cook until lightly golden and fragrant.
- Fry the rice: Add the chilled rice, breaking up any clumps. Stir-fry for 4–6 minutes until thoroughly heated. Season with salt.
- Fry the eggs: Heat a little oil in a non-stick skillet and fry the eggs until the whites are set and the yolks reach your preferred doneness.
- Assemble the plates: Divide the garlic rice among four plates. Add two small longganisa links and one fried egg to each.
- Serve: Enjoy hot with sliced tomatoes, cucumber, or spiced vinegar on the side.
