Filipino Tapsilog is a beloved Filipino breakfast featuring three classic components: tapa (marinated beef), sinangag (garlic fried rice), and itlog (fried egg). The dish is known for its savory, slightly sweet beef, fragrant garlic rice, and rich egg yolk. Served together on one plate, these simple ingredients create a hearty and satisfying meal enjoyed in Filipino homes, cafés, and silog restaurants.
The beef is marinated with garlic, soy sauce, a little sugar, and citrus juice before being pan-fried until tender and lightly caramelized. Day-old rice is then stir-fried with plenty of garlic until fluffy and fragrant, while eggs are fried to your preferred doneness. Traditionally served with vinegar dipping sauce or tangy atchara (pickled green papaya), Tapsilog is a delicious way to experience the comforting flavors of Filipino home cooking.
Cooking Method
- Marinate the beef: In a bowl, combine the soy sauce, calamansi or lemon juice, minced garlic, brown sugar, and black pepper. Add the beef and mix well.
- Rest the beef: Cover and refrigerate for at least 20–30 minutes. For deeper flavor, marinate for several hours.
- Cook the tapa: Heat 1 tablespoon of oil in a skillet over medium-high heat. Drain excess marinade from the beef, then cook the slices in batches until browned and fully cooked. Avoid overcrowding the pan.
- Prepare the garlic rice: Heat 2 tablespoons of oil in a separate pan over medium heat. Add the minced garlic and cook until fragrant and lightly golden.
- Fry the rice: Add the chilled rice, breaking up any clumps. Stir-fry for 4–6 minutes until heated through. Season with salt to taste.
- Cook the eggs: Heat a little oil in a non-stick pan. Fry the eggs until the whites are set and the yolks reach your preferred doneness.
- Assemble the plates: Divide the garlic rice among four plates. Add the beef tapa and one fried egg to each plate.
- Serve: Enjoy hot with atchara, sliced tomatoes, or a small bowl of vinegar dipping sauce.
