Filipino Tuyosilog is a traditional Filipino breakfast featuring three simple favorites: tuyo (salted dried fish), sinangag (garlic fried rice), and itlog (fried egg). Known for its bold, salty fish, fragrant garlic rice, and rich egg yolk, this classic silog meal delivers plenty of flavor from a handful of everyday ingredients. It's especially popular among people who enjoy traditional Filipino home-style breakfasts.
The dried fish is pan-fried until crisp and golden, while leftover rice is stir-fried with fragrant garlic for a delicious, savory side. A freshly fried egg balances the salty fish, and sliced tomatoes, cucumber, or spiced vinegar add freshness and tang. Easy to prepare and budget-friendly, Tuyosilog is a satisfying breakfast that celebrates the comforting flavors of Filipino cuisine.
Cooking Method
- Prepare the fish: If the dried fish is very salty, rinse it briefly and pat it completely dry. Skip rinsing if the package advises against it.
- Fry the tuyo: Heat 2–3 tablespoons of oil in a skillet over medium heat. Fry the fish for about 2–3 minutes per side, depending on size, until crisp. Transfer to a plate lined with paper towels.
- Cook the garlic: Heat 2 tablespoons of oil in a separate pan over medium heat. Add the minced garlic and cook until lightly golden and fragrant.
- Fry the rice: Add the chilled rice, breaking up any clumps. Stir-fry for 4–6 minutes until thoroughly heated.
- Season the rice: Taste before adding salt, since the dried fish is already salty. Add a little only if needed.
- Fry the eggs: Cook the eggs in a lightly oiled skillet until the whites are set and the yolks reach your preferred doneness.
- Assemble the plates: Divide the garlic rice among four plates. Add one fried egg and one portion of crispy tuyo to each plate.
- Serve: Enjoy immediately with sliced tomatoes, cucumber, or spiced vinegar.
