Amatriciana Sauce is a beloved Italian pasta sauce originating in Amatrice, a town in the Lazio region. Traditionally made with guanciale (cured pork cheek), tomatoes, Pecorino Romano cheese, and a touch of chili, this classic sauce is famous for its rich, savory flavor and satisfying balance of sweetness, saltiness, and gentle heat. As the guanciale slowly renders, it creates a flavorful base that gives the tomato sauce its distinctive depth.
Often served with bucatini or spaghetti, Amatriciana is a staple of traditional Roman-style cooking. The sauce is simple enough for a weeknight dinner yet flavorful enough for a special Italian meal. With quality ingredients and a gentle simmer, you can make a restaurant-worthy sauce at home. If guanciale is unavailable, pancetta can be used as a practical substitute, although the traditional flavor will be slightly different.
Cooking Method
- Cut the guanciale into small strips or cubes.
- Place it in a skillet over medium-low heat and cook for 6–8 minutes, stirring occasionally, until the fat renders and the pieces turn golden. Add a little olive oil only if needed.
- Stir in the chili flakes and cook for about 20 seconds.
- If using wine, pour it into the skillet and let it simmer until mostly evaporated.
- Add the crushed tomatoes and stir to combine with the rendered pork fat.
- Reduce the heat and simmer gently for 15–20 minutes, stirring occasionally, until the sauce thickens.
- Taste before adding salt, as guanciale and Pecorino Romano are already salty.
- Toss with freshly cooked bucatini or spaghetti, adding a splash of pasta water if needed to help the sauce cling.
- Remove from the heat and mix in some grated Pecorino Romano.
- Serve immediately with extra Pecorino and freshly ground black pepper.
