Bordelaise Sauce is a traditional French sauce celebrated for its deep, rich flavor and elegant red wine aroma. Originating from the Bordeaux region of France, this classic sauce is made with red wine, shallots, beef stock, herbs, and butter. Its savory character and smooth texture make it an excellent companion for grilled steak, roasted beef, lamb, and other hearty dishes.
The sauce begins with a slow reduction of red wine and finely chopped shallots, allowing their flavors to become concentrated. Beef stock is then added and simmered until the mixture develops a rich consistency. A little butter brings everything together, creating a glossy finish with a balanced combination of fruity, savory, and aromatic notes.
Perfect for special dinners or restaurant-style meals at home, Bordelaise Sauce adds depth and sophistication to simple meat dishes. Serve it warm over freshly cooked steak or alongside roasted vegetables for a classic French-inspired meal.
Cooking Method
- Melt half the butter in a saucepan over medium heat.
- Add the chopped shallots and garlic. Cook until softened.
- Pour in the red wine and add the thyme and bay leaf.
- Simmer until the wine reduces by about half.
- Add the beef stock and bring the mixture to a gentle boil.
- Reduce the heat and simmer for 15–20 minutes, until the sauce thickens slightly.
- Strain the sauce to remove the shallots and herbs, if you prefer a smooth finish.
- Return the sauce to the pan over low heat.
- Whisk in the remaining butter until glossy.
- Season with salt and black pepper, then serve warm.
