Espagnole Sauce, also known as French brown sauce, is one of the five classic French mother sauces. It is a rich, savory sauce traditionally made with brown stock, butter, flour, tomato paste, and aromatic vegetables. Slow simmering allows the ingredients to develop a deep color and concentrated flavor.
This traditional sauce is an excellent base for other sauces, including demi-glace. Its robust taste pairs beautifully with roasted beef, steak, lamb, chicken, and other hearty dishes. Although it takes longer to prepare than some basic sauces, the result is a flavorful homemade sauce that adds a classic French touch to your cooking.
Cooking Method
- Melt the butter in a saucepan over medium heat.
- Add the onion, carrot, and celery. Cook until softened and lightly browned.
- Stir in the flour and cook for 2–3 minutes, stirring continuously, until it develops a light brown color.
- Add the tomato paste and garlic, then stir until combined.
- Gradually pour in the beef or veal stock while whisking to prevent lumps.
- Add the bay leaf and black pepper.
- Bring the mixture to a gentle simmer.
- Reduce the heat and cook uncovered for 30–40 minutes, stirring occasionally.
- Strain the sauce through a fine sieve for a smooth texture.
- Season with salt as needed and serve warm with roasted or grilled dishes.
