Tandoori Chai is a distinctive Indian street-style beverage known for its rich flavor, creamy texture, and signature smoky aroma. Traditionally prepared by pouring freshly brewed masala tea into a red-hot clay cup, called a kulhad, this unique drink gets its special character from the heat of the clay. The hot cup creates a dramatic sizzling effect and gives the tea a subtle earthy, roasted aroma.
The tea itself is made with strong black tea, milk, sugar, ginger, cardamom, and warming spices. After brewing the chai until rich and fragrant, it is carefully poured into a clean, heat-safe preheated clay cup. The intense heat creates bubbles and a smoky fragrance that make Tandoori Chai different from ordinary milk tea.
Popular at Indian tea stalls and cafés, Tandoori Chai is a fun choice for anyone who enjoys bold, aromatic drinks. Serve it piping hot with biscuits, samosas, pakoras, or other favorite snacks.
Cooking Method
- Pour the water into a saucepan and bring it to a boil.
- Add the crushed ginger, cardamom, and cinnamon.
- Simmer for 3 minutes to release the spices' aroma.
- Add the black tea leaves and boil for another 2 minutes.
- Pour in the milk and add sugar according to your taste.
- Bring the mixture to a gentle boil and simmer for 3–4 minutes until rich and fragrant.
- Stir in the optional cream for extra richness.
- Strain the tea into a heat-safe pouring jug.
- Carefully preheat a clean, food-safe clay kulhad using appropriate heat-resistant equipment. Avoid sudden temperature changes, and never use an ordinary or damp clay cup over direct flame.
- Place the hot clay cup in a stable, heat-resistant holder and carefully pour in the freshly brewed tea.
- Allow the tea to bubble and develop its characteristic earthy aroma.
- Serve immediately, using a safe outer holder because the clay cup will be extremely hot.
