Harissa is a traditional Tunisian chile paste known for its bold heat, rich red colour, and distinctive North African flavour. Made with dried red chillies, garlic, olive oil, and aromatic spices, this versatile condiment adds depth and warmth to a wide variety of dishes. Cumin, coriander, and caraway seeds provide an earthy fragrance, while lemon juice brings a refreshing touch of acidity.
This homemade harissa paste is easy to prepare and can be adjusted to suit your preferred spice level. Use it as a marinade for chicken, fish, or vegetables, spread it inside sandwiches, or mix it into soups, stews, and rice dishes. Store it in a clean airtight jar in the refrigerator and always use a clean spoon when serving.
Cooking Method
- Remove the stems and most of the seeds from the dried chillies if you prefer a milder paste.
- Soak the dried chillies in hot water for 15–20 minutes until softened.
- Drain the chillies thoroughly.
- Lightly toast the cumin, coriander, and caraway seeds in a dry pan until fragrant.
- Transfer the softened chillies, garlic, toasted spices, and salt to a food processor.
- Add olive oil and lemon juice, then blend into a thick, smooth paste.
- Scrape down the sides and blend again until the desired consistency is reached.
- Transfer the harissa to a clean jar and level the surface.
- Add a thin layer of olive oil on top and refrigerate.
